Vine variety: Dolcetto 100%.
Yield: 65 quintal/hectare.
Alcoholic content: minimum natural degrees of
grapes 12,5.
Denomination: Dolcetto d’Alba DOC, Langhe Dolcetto
DOC.
Subdenomination: i Terrazzamenti.
Origin of grapes: the grapes used to produce this
wine derived exclusively from small vineyards or from few rows on dry-stone walls
(the terracings) with southern exposure.
Quality of grapes: great care to the grapes in
vineyard in order to increase constantly the quality; it starts from a balanced
pruning and from a fertilizing, poor in nitrogen, which force the vine to produce
few bunches and few leaves. During the summer the correct stripping, the green pruning
and the position of grapes are essential to be aired correctly without being burnt
by the sun, but at the same time they can benefit of the best conditions for a good
maturation preserving the health and intactness. In August there is another balanced
bunches pruning and during the harvest, after the maturation, they make a further
selection of the best grapes.
The harvest: the quality controls in vineyard
start in September and the harvest starts when the predetermined objectives are
reached. The harvest is manual using small boxes and usually takes place in the
second ten days of September.
Vinification and ageing: the grapes arrive in
the cellar, then destemming and soft crushing take place. The juice obtained is
placed in the fermentation tank, where the selected yeasts are added in order to
start the alcoholic fermentation, which lasts 10-12 days at a controlled temperature
of 22°-26° C.

In this period, the producers make the daily pumpings over and the punchings down
the cap, which contribute to improve the quality of product, because they facilitate
the passage and dissolution of polyphenols and anthocyans of grapes in the must.
At the end of the alcoholic fermentation, after the draining off, the wine is stored
in appropriate conditions necessary for the malolactic fermentation. At the end
of malolactic fermentation, usually by November, the wine is subjected to cold temperatures
of Winter, which contribute at the natural clarification, and the wine will be ready
for bottling in Spring.
Ready for the consumption: from the 1st March after the harvest
Characteristics of wine: the colour is an intense ruby red with tints of violet.
The bouquet is wide, complex, fine, with aromas of blackberry and cherry. In the
mouth the fruit, which is full and mellow in the nose, has a fine structure with
almonds and pepper in aftertaste.
